Messermeister was founded in 1981 by Bernd and Debra Dressler. In 1992, they redefined German knife design by introducing demi-bolster construction so the entire edge could be sharpened from heel to tip, and set a new sharpness standard with polished 15° edges. After Bernd passed away in 2002, daughters Chelcea and Kirsten joined their mother Debbie in the business. In 2010, the sisters assumed leadership, making Messermeister the only fully women-owned and operated knife company in the world. Debbie Dressler passed away in 2025 after 44 years leading the company. This 8-inch chef's knife is crafted from cold-rolled, laser-cut Thyssen-Krupp 1.4116 German stainless steel with a ceramic stonewashed finish. It features a hand-finished 3-stage edge at 57 HRC hardness and a flat grind blade design. The linen micarta handle and demi-bolster construction make this a knife that does what a knife is supposed to do: cut things, sharpen easily, and last.
Handcrafted in Solingen, Germany, which we're told is very serious about knives. This one has a demi-bolster, which means you can sharpen the whole edge instead of leaving a dull sad patch at the heel like some kind of quitter. Comes with a stonewashed finish that hides scratches, because even if you're careful, knives lead hard lives.
